Ojos de Brujo
I've been enjoying listening to Ojos de Brujo over the past few months. They're a band from Barcelona who play what they call (and I swear to god this is from their bio) "Jip Jop Flamenkillo" (that's how you'd spell "hip hop" in Spanish). I wouldn't classify it as hip hop; I don't know if I'd classify it as anything. Despite being a mix of different styles, it's definitely Spanish through and through. The guitar sounds Spanish, the vocals are really flamenco sounding, and songs are peppered with typical flamenco palmas.
I picked this record up a while ago after reading a review of it at my favorite record store, Other Music. It was on one of the (many, many) best of 2004 lists compiled by the store's employees. I wasn't that thrilled with it after one listen, but it has definitely grown to be a favorite since. In fact, I'm a little sorry I didn't visit their website until today- they played in New Haven at the end of June.

I think you should check them out.
